Italian Chicken Casserole

Tonight's meal will hopefully make my Nonna proud- Italian Chicken Casserole.

Prep time: 15 mins
Cook time: 40 minutes

Serves: 4

Ingredients:

1 tbsp oil
1kg chicken drumsticks
2 cloves garlic, crushed
2-3 medium potatoes, chopped
2 zucchini, chopped (I didn't have any)
1 carrot, chopped
1/4 cup plain flour
1 x 500ml pack Campbell's Real Stock Chicken
4 tbsp tomato paste
2 tsp dried Italian herbs

Method

1. Preheat oven to 220 degrees Celsius

2. Heat oil in a frying pan over med- high heat and cook chicken until well browned on all sides

3. Transfer chicken to a ovenproof casserole dish and add a splash of oil, onion, garlic, potato, zucchini and carrot.

4. In a jug, combine flour with stock until evenly mixed. Stir in tomato paste and herbs then pour over chicken.

5. Place in oven for 1 hour or until chicken is cooked through. Serve with rice, mash, pasta or cous cous.
